Ingredients:

  • 2 medium size sweet potatoes, chopped
  • 1 large red bell pepper, chopped
  • 1 medium-sized onion, diced
  • 1/2 cup chopped green onion
  • 1/4 cup chopped parsley
  • 2 & 1/2 tsp smoked Spanish paprika
  • 1/2 tsp ground black pepper
  • 1/4 tsp cayenne pepper (optional)
  • salt to taste
  • 3 tbsp olive oil

Directions:

Step 1

To start, chop your veggies accordingly and put them in a large bowl. Season them with 2 & 1/2 tsp smoked Spanish paprika, 1/2 tsp ground black pepper, 1/4 tsp cayenne pepper, and salt to taste. Drizzle 3 tbsp olive oil on top and mix well. Line your baking sheet with parchment paper and transfer the sweet potato mixture, spreading them evenly.

Step 2

Bake them in a 425 degrees F oven for about 25 to 30 minutes or until the sweet potatoes are cooked. While waiting, chop your green onion and parsley. Remove the sweet potatoes from the oven, and sprinkle the chopped green onion and parsley on top. Finish it by drizzling some olive oil, then serve.
