Ingredients:

Muffin Batter:

  • 1 1/2 cups of self-rising flour
  • 1/3 cup granulated sugar
  • 1 tsp cinnamon
  • 1/3 cup oil
  • 1 large egg
  • 1/2 cup milk
  • 1 tsp vanilla extract

Streusel Topping:

  • 1/4 cup light brown sugar
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • 2 tbsp unsalted butter, cold
  • 3 tbsp flour

Icing:

  • 1/4 cup powdered sugar
  • 1 1/2 – 2 tsp milk

Directions:

Step 1

Preheat your oven to 350 degrees F and grease your muffin pan with non-stick cooking spray. Next, in a large mixing bowl, combine 1/3 cup granulated sugar, 1/3 cup oil, 1 tsp cinnamon, 1/2 cup milk, 1 large egg, and 1 tsp vanilla extract. Mix well. After this, add 1 1/2 cups of self-rising flour and fold until just combined. Set aside. Next, make the streusel topping. In a medium bowl, add 1/4 cup light brown sugar, 1 tsp cinnamon, and 3 tbsp flour. Mix well, then add 2 tbsp cold unsalted butter. Work on it with your hands and break up the butter into the mixture until crumbly.

Step 2

Now, scoop out the batter evenly in each muffin cup, filling them until two-thirds full. After this, divide the streusel over the top and gently press into each muffin. Once done, place the muffin pan in the preheated 350 degrees F oven and bake for 9 to 12 minutes or until the muffins are light golden brown. In the meantime, make the icing. In a small bowl, combine 1/4 cup powdered sugar and 1 1/2 – 2 tsp milk. Mix well until smooth. Once the muffins are done baking, let them cool down for 15 minutes, then drizzle the icing on each top. Serve and enjoy!
