Ingredients:

  • 1 tbsp olive oil
  • 10 – 12 chicken thighs, skin-on, bone-in
  • salt and pepper, to taste
  • herbs de Provence, to taste
  • 12 oz small Dutch baby potatoes, sliced in half
  • 2 tbsp of flour
  • 2 cloves of garlic, minced
  • 5 sprigs of fresh thyme

Broth mixture:

  • 1 cup chicken broth
  • 1/4 cup white wine (or 1/4 cup more broth)
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce

Directions:

Step 1

Preheat the oven to 325 degrees F. Next, pre-measure the broth mixture in a mixing jug so it’s ready to go. Just combine 1 cup of chicken broth, 1/4 cup of white wine, 2 tsp Dijon mustard, and 1 tsp Worcestershire sauce. Mix well and set aside. Now, moving on to the chicken. Mix salt and pepper to taste and herbs de Provence to taste, and season the chicken with this mixture. Then, heat 1 tbsp of olive oil in a large braiser, and once it’s hot, place the chicken thighs, skin side down. Sear each side until golden brown, then transfer to a plate and set aside.

Step 2

For the potatoes, slice them in half and place them in the same braiser. Sear for a few minutes until golden brown. Set aside. Now, add 2 tbsp of flour to the same braiser and whisk it. Once the paste is formed, add the broth mixture, and keep mixing on high heat. When small bubbles start to form on the edges, add two cloves of minced garlic and five sprigs of fresh thyme. Add the potatoes back to the pan and place the chicken on top of the potatoes. Cover the braiser with its lid and put it in the preheated oven for 40 minutes.
