Using soda in food recipes is very common, but I’ve never heard of using Sprite. This pork adobo recipe uses Sprite to simmer which infuses into the pork belly. Filipino food is not something I’ve had often or much at all. I know that adobo is a popular Filipino dish, and it looks flavorful. This dish is usually served with a side of jasmine rice because the sauce on the pork belly is salty and pairs well with something that is bland. Ingredients:

  • 2 lbs pork belly, sliced in cubes
  • 4 tbsp soy sauce
  • 4 tbsp white vinegar
  • 1 tsp whole peppercorn
  • 4 pieces of dried bay leaves
  • 2 cups Sprite
  • 1 head garlic, chopped
  • 3 tbsp cooking oil

Directions:

First, slice the pork belly into serving pieces. Combine the pork with soy sauce, and vinegar in a separate bowl. Mix well and marinate for 30 minutes.

Next, heat oil in a pot, and saute garlic until it turns golden brown. Add the marinated pork belly, and saute until it turns light brown. Pour the remaining marinade into the pot with whole peppercorn and fried bay leaves. Mix everything around, and pour in the Sprite. Let it boil. Honestly, I don’t know why this recipe included Sprite, but I think it might add a nice tangy finish once the liquid boils out and infused into the pork belly. I think it’s an interesting recipe, but it looks delicious. This would be a great dinner recipe if you’re wanting something to go along with white rice. The flavors and sauces keep the pork tender and moist.
