Homemade chicken noodle soup is one of the most classic soup dishes out there. It’s one of the best soups when you’re sick or wanting something to warm your soul up during the cold or rainy weather. Joshua Weissman’s tutorial on YouTube shows how to make your own homemade chicken stock. This reminds me of my childhood because my dad and I would always make chicken noodle soup from scratch. It makes such a difference when you make your own broth and noodles. You can still make everything from scratch in 30 minutes, but if you want to skip out on everything this recipe will still be great. Joshua’s homemade chicken noodle soup looks amazing, and I want to make my own now following his tutorial and recipe.

Ingredients:

  • 2 pounds chicken (breast, thigh, or both/ Optionally skin on)
  • 1 tablespoon unsalted butter
  • 1 onion
  • 3 carrots
  • 4 celery ribs
  • 2.5 qt good chicken stock
  • 1/2 bundle fresh thyme
  • 1 bunch fresh parsley stems
  • 1/2 bundle fresh sage
  • salt and pepper to taste

Directions:

Next, add all of the chopped vegetables and sautee them before adding in the chicken stock. Turn the heat onto high and let it come to a boil. Add the chicken and bouquet of herbs into the soup, and let it simmer on low heat.

You can make your own pasta noodles, but for the 30-minute recipe, you can boil the pasta in a separate pot so it doesn’t make the broth too starchy. Make sure to undercook the noodles slightly, because they will cook the rest when placed into the broth before serving.
