This delicious and loaded baked potato recipe by Island Vibe Cooking on YouTube is something I never thought I needed, I tried it out for dinner, and it is probably one of the best dishes I’ve ever had. I am planning to make a larger batch of this and serve it to my family so that they could get to enjoy it, too. Ingredients:

Potatoes

  • 2 russet potatoes
  • Oil
  • Salt

Chicken

  • 1 chicken breast
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 tablespoon of complete seasoning
  • 1 teaspoon French seasoning mix

Cheese Sauce

  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped onion
  • 2 cloves minced garlic
  • 1 teaspoon dried parsley
  • Cheese
  • 1 cup heavy cream

Other

  • 4 tbsp butter
  • Lemon pepper
  • ½ cup heavy cream
  • Salt and pepper, optional

Directions:

Step 1

Wash and clean the potatoes well, then using a fork, poke holes all around the potatoes, drizzle oil on them, and massage until well coated. Sprinkle some salt all over the potatoes, then wrap them each in foil, and place them on a baking sheet. Put them inside a preheated oven, then allow them to bake for about 1 hour and 30 minutes at 400°F, and while waiting for them to bake, prepare the chicken. Cut the chicken through in half to make them thinner, then cut them into small bite-sized pieces, drizzle them with oil, and massage until well coated. In a small bowl, mix together the paprika, chili powder, complete seasoning, and French seasoning mix until well combined and uniform, then pour it all over the cut chicken, and give them a good mix until well seasoned.

Step 2

Place a skillet pan on a stove over medium-high heat, then drizzle some oil, and let it heat up before placing the seasoned chicken pieces. Let them cook until nice and brown, then transfer them to a bowl, and set them aside. In the same pan, add the chopped bell pepper and onions, then give them a good toss, and saute before adding the minced garlic. Toss them and cook for about 30 seconds, then pour the heavy cream, and stir them together to combine. Season them with salt and pepper to taste if desired, then add the cheese, and give them a good stir until well combined. Bring the mixture to a simmer and let it cook for about 1 minute until the cheese has melted and the sauce has thickened, then turn off the heat, and set the sauce aside.

Step 3

Once the potatoes are done baking, unwrap the foil, then slice off the top as shown in the video, and scrape all of the insides leaving only the shell. Transfer the scraped potatoes to a large mixing bowl, then mix together the melted butter and lemon pepper until incorporated, and pour it into the bowl of potatoes. Add the cheese along with some heavy cream, then beat them together until incorporated and combined, and stuff it into the potato shells, make sure to place the potato shells in a baking dish. Top them with the cooked chicken, then add the prepared cheese sauce on top, followed by shredded cheese, and sprinkle some dried parsley. Put them back in the preheated oven, then allow them to bake for about 15 to 20 minutes, and garnish with more parsley. Serve and enjoy!
