Old school Taco Bell Fans may remember the chilito, which is now called the chili cheese burrito. I was so excited when I found this wonderful Youtube video by Jaxx Drinkwater who made this awesome tutorial on how to make an old school chilito taste just like Taco Bell, except better! This chili recipe makes a lot so it’s is great for many things you can make dips as well and always make extra burritos and save them individually in plastic zip lock bags that can be frozen and heated up in the microwave as needed. If you heat them when they are frozen you set the timer at 1:11 each side and they turn out perfect.

Ingredients:

  • 1 pound ground chuck beef
  • 1 onion (diced)
  • 4 tablespoons chili powder ( Gebhardts Chili Quick is a Texas favorite)
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 2 cups of water
  • 6 ounces of tomato paste
  • 1 can refried beans
  • 1 large bag of flour tortillas
  • 1 bag (8 ounces) of shredded cheddar and Monterey Jack cheese (mixed or any cheese will work)

Cornstarch Slurry:

  • 2 tablespoons of water
  • 2 tablespoons cornstarch

Add Ons Optional:

  • Sour Cream
  • Chopped Purple Onions
  • Fritos Corn Chips (Doritos, or any chip of your choosing)

Directions:

In the fabulous video, you will learn to make this delicious thick chili with Rosarita Refried Beans, Gebhardt’s Chili Quick, and lots of cheese. Yum!
