31. Lemon Garlic Chicken Kebabs on the Grill

Little Broken

Kebabs are the easy way to feed a cookout crowd. Chicken thighs, cut into 2-inch pieces, soak for at least 2 hours (or overnight) in olive oil, lemon juice and zest, oregano, a lot of garlic, Dijon and parsley. Thighs stay juicy on the grill where breasts can dry out. Thread them with lemon slices, which char and turn sweet. Serve them with rice, pita or a big salad.

32. Cilantro Lime Grilled Swordfish Steaks

The Stay at Home Chef

Swordfish is the steak of the sea. It’s firm and meaty, so it holds up on the grill without falling apart. A cilantro lime treatment keeps it fresh and bright, and the photo shows those satisfying grill marks topped with plenty of chopped cilantro. Squeeze over lime wedges before serving. It’s a great pick if you want seafood on the grill but are nervous about delicate fish sticking to the grates.

33. Apricot & Orange Grilled Pork Skewers

Cooking & Beer

Fruit and pork are a classic pair, and these skewers prove it. Pork tenderloin cubes marinate in apricot preserves, olive oil, honey, honey Dijon, soy sauce, orange juice, minced garlic and rosemary for at least an hour. Then they go on skewers with whole garlic cloves and get grilled until the glaze turns sticky and caramelized. Those whole roasted garlic cloves are a secret bonus. Serve with orange wedges for a pop of color.

34. Soy Marinated Grilled Chicken Skewers

These skewers keep things simple and full of flavor. Cubes of chicken breast marinate for 30 minutes up to 4 hours in olive oil, soy sauce, turmeric, ginger and thyme. The turmeric gives them that golden color. Grill them until they pick up a nice char, then serve with the recipe’s turmeric bulgur wheat on the side. It all comes together in about 25 minutes, so it’s great for a busy weeknight.
