Banana boats are pure campfire fun. Slice a banana lengthwise right through the peel, open it up and stuff it with chocolate, marshmallows and whatever toppings you love. The photo includes peanut butter cups and graham cracker pieces. Wrap it in foil and warm it on the grill until everything melts together. Kids love building their own, and grown-ups secretly love them just as much.

45. Grilled Pineapple with Raspberry Dipping Sauce

April Go Lightly

Grilled pineapple chunks on skewers with mint and a bowl of creamy raspberry dipping sauce

Pineapple on the grill turns extra sweet and juicy as the sugars caramelize into golden grill marks. These chunks go on skewers for easy grabbing, and the dip is a creamy pink raspberry sauce that’s fun with every bite. A little fresh mint on top adds color. It’s a light, pretty appetizer or dessert, and since the grill is already hot, why not?

46. Barbecue Bacon Hot Dogs

The humble hot dog gets the royal treatment. Each one is wrapped in a slice of bacon and grilled over medium heat until the bacon crisps, then brushed with barbecue sauce. Tuck them into buns and pile on crispy fried onion strings. It’s only five ingredients and about 20 minutes, but it tastes like ballpark food that went to finishing school. Guaranteed to beat a plain dog every time.

Grilling fruit is the easiest dessert of the summer. Halved cherries and big chunks of peach go on skewers and grill over medium heat for 10 to 15 minutes until tender and marked. Then a warm syrup of honey, butter and cinnamon gets poured over the top. Add a scoop of vanilla ice cream and watch it melt into the syrup. It’s simple, fresh and a little fancy.

48. Grilled Pineapple with Coconut Milk

This one tastes like a tropical vacation. Pineapple slices get dipped in coconut milk, coated in a brown sugar mixture and grilled for 4 to 5 minutes a side until the sugar caramelizes. A brush of more sugar and coconut milk while they cook keeps them glossy. Serve two warm slices with a scoop of ice cream and a sprinkle of toasted coconut. Pure summer grilling happiness.
