Blueberry Coulis

Cheesecake Filling
Step 1
Place a saucepan on a stove over medium heat, then add in the blueberry, sugar, and lemon juice, and bring it to a simmer. Allow it to continue simmering for about 5 minutes or until the blueberries start to break down and the sauce thickens, then mash them finely, and turn off the heat.
Step 2
Transfer the coulis into a large bowl, then set it aside, and let it cool completely. Put the biscuits in a Ziploc bag, then crush them until fine crumbs, and transfer them to a large bowl.
Step 3
Add in the desiccated coconut, lemon zest, and melted butter, then mix everything until evenly combined, and transfer it to a 9-inch square pan greased with butter and lined with parchment paper.
Step 4
Put it in the freezer and let it chill for about 30 minutes, then in another bowl, add the cream cheese, and beat it until smooth. Add in the sour cream, sugar, all-purpose flour, lemon juice, and vanilla extract, then continue to mix until combined, and set it aside.
Step 5
Add the beaten eggs, then fold them and mix well, and pour the mixture into the prepared pan spreading it evenly. Spoon the blueberry mixture on top, then swirl them, and gently shake the pan to even out the surface.
Step 6
Allow it to bake in an oven preheated at 285°F for about 55 minutes or until set but the center is still wiggly, then remove it from the oven, and let it cool completely. Place it in the fridge, then let it chill for at least 8 hours, and serve. Enjoy!
