This recipe is a staple in my home cooking, especially during the fall and winter seasons. I love how the meat just literally falls off the bone when you grab the ribs and the broth – it’s hearty and addicting.

Ingredients:

  • 3 lb rack of ribs
  • 2 lb country-style ribs
  • 1 lb beans, rinsed
  • 4 tsp salt
  • 4 tsp ground black pepper
  • 24 – 36 oz green hatch chile
  • 1/2 onion, diced
  • 2 garlic cloves
  • 2 bay leaves
  • freshly chopped cilantro
  • 1 1/2 tsp dried cilantro flakes
  • 1 tsp oregano
  • 8 cups of hot water
  • 1 tsp ground cumin

Directions:

Step 1

To start, remove the membrane of your ribs (some ribs already have their membrane out), then cut them individually. After this, season them with salt and ground black pepper on each side. Now, set your pressure cooker on saute mode, then heat a little bit of oil. Once hot, place the ribs and sear them for three minutes on each side. (Cook your ribs by batch as they will not all fit in the pressure cooker.)

Step 2

Once you have all the ribs cooked, set them aside, then saute the onions and the garlic cloves using the leftover oil in the pressure cooker. After a couple of minutes, add a serrano chili for an extra kick (optional). Next, add 24 oz green hatch chile. Season with 1 1/2 tsp dried cilantro flakes, 1 tsp oregano, and 1 tsp ground cumin, then add 8 cups of hot water. Mix everything well and let it come to a simmer.

Step 3

Once it starts to simmer, add the beans and the cooked ribs. (The ribs should be covered with the broth. Add a bit more water if not.) Add freshly chopped cilantro and two bay leaves, then cover the pressure cooker with its lid. Set it on meat setting and cook for one hour and twenty minutes. Once done cooking, allow it to rest for at least 20 minutes before serving.
