For the strawberry filling:

Homemade glaze:
Add sugar and cornstarch in a small saucepan and whisk until well combined.
Mix in quartered berries and lemon juice.
Place the saucepan over medium-low heat and cook until the berries are soft and start to release their juices, making sure to stir frequently. Next, mash the berries with a potato masher or large fork. Continue cooking and stirring until it has a jelly-like consistency.
Once the mixture is thick, remove it from heat then add the butter. Stir until well combined. Transfer it to a heatproof bowl, cover with cling wrap, then refrigerate.
Make the cookie dough.
In a large mixing bowl, beat the butter and sugar using an electric mixer for about 1 minute at high speed until light and fluffy. Stir in vanilla extract and eggs. Set aside.
In a medium mixing bowl, whisk flour, cornstarch, baking powder, baking soda, and salt.
Gradually add the dry mixture to the wet mixture, mixing after every addition. Cover it tightly with plastic wrap and refrigerate for only 30 to 60 minutes.
Once the dough has chilled and the filling is cooled, scoop 1/4 cup of dough and divide it into two. Form each into a shallow nest. Add two tablespoons of strawberry filling into one nest and cover it with the other. Pinch the edges of the dough together, then gently roll to create a ball. Repeat with the remaining mixture.
Place the dough balls onto a baking sheet and cool in the freezer for 10 to 15 minutes.
Preheat your oven to 375F and line a baking sheet with parchment paper.
Once the dough has chilled, place the cooled dough balls on the prepared baking sheet, spacing them at least 2 inches apart. Place inside the center rack of the preheated oven and bake for 14 to 16 minutes. Once done, allow them to cool completely on the baking sheet.
