I’ve never tried any scalloped potatoes comparable to this recipe from Island Vibe Cooking on YouTube. It’s so good; I always make this at every holiday gathering or even at regular dinners, as my family surely knows their potato. And if you love cheese, this recipe is nothing short of it. You can put multiple cheeses, and this dish will still taste delicious.

Ingredients:

  • 4 large russet potatoes
  • 2 tbsp unsalted butter
  • 1 tbsp minced garlic
  • 2 tbsp all-purpose flour
  • 2 cups of whole milk
  • 1 tbsp Tony Chachere’s creole seasoning
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 1/2 tsp ground black pepper
  • 1/2 tsp white pepper
  • 1/4 cayenne powder
  • 1 tsp paprika
  • 1/4 tsp dried parsley
  • 16 oz yellow cheddar, shredded
  • 16 oz Colby Jack cheese, shredded

Directions:

Step 1

To start, peel your potatoes and slice them thinly. Once done, transfer them to a large bowl with water to remove the starch. Set it aside. In the meantime, melt 2 tbsp unsalted butter in a large pan over medium heat, then add 1 tbsp of minced garlic. Add 2 tbsp of all-purpose flour and cook for 30 seconds. Once the flour is no longer visible, pour 2 cups of whole milk while stirring continuously. Season with 1 tbsp Tony Chachere’s creole seasoning, 1/2 tbsp onion powder, 1/2 tbsp garlic powder, 1/2 tsp ground black pepper, 1/2 tsp white pepper, 1/4 cayenne powder, 1 tsp paprika, and 1/4 tsp dried parsley. (Turn down the heat to medium-low at this point).

Step 2

Next, add 16 oz shredded yellow cheddar and 16 oz shredded Colby Jack cheese. Stir as you go, making sure the cheese is all melted. After this, pour the cheese mixture over the potatoes (make sure the potatoes are nice and dry before mixing them). Once the potatoes are nicely coated, transfer half of them to a casserole dish, placing them right on top of each other. Add another layer of shredded cheese on top, then add the rest of the potatoes. For the top layer, add some more shredded cheese, then sprinkle a bit of paprika and dried parsley. Cover the casserole with aluminum foil, then place it in a 375 degrees F oven for 50 minutes.
