Peanut Butter Pretzel Buckeyes Ingredients

  • 1 cup of peanut butter
  • 2 tablespoons of butter (room temperature)
  • 1/2 cup of powdered sugar
  • 1/2 cup of brown sugar
  • 1 bag of mini pretzels
  • 12 oz of chocolate chips (semi-sweet or dark) or chocolate almond bark
  • 1 teaspoon of coconut oil

How to Make Pretzel Buckeyes

Step 1:

Start by adding the peanut butter and butter to a mixing bowl. Using an electric hand mixer, beat them together until well combined.

Step 2:

Add powdered sugar and brown sugar to the peanut butter and butter mixture. Mix until incorporated.

Step 3:

Prepare the cookie sheet by covering it with a silicone baking mat, parchment paper, or wax paper.

Step 4:

Spoon one rounded teaspoon of the peanut butter mixture onto a pretzel and sandwich it to another pretzel. Place it into the prepared cookie sheet. Repeat with the remaining mixture. Place in the refrigerator for a few minutes while making the chocolate.

Step 5:

Add the chocolate chips and coconut oil into a heat-safe bowl and microwave in 30-second increments, stirring in between, until fully melted.

Step 6:

Remove the pretzels from the fridge dip half of each one into the melted chocolate and place back onto the cookie sheet. Place back in the fridge until the chocolate sets. Enjoy!
