Ingredients:

  • 6½ ounces or 3 cans of clams, drained and chopped, save the juice
  • 2 cups of heavy cream
  • 2 cups of milk
  • 2 cups of potatoes, cubed
  • 1 cup of yellow onions, minced
  • 1 cup of celery, diced
  • 1 cup of carrots, diced
  • ¾ cup of unsalted butter
  • ¾ cup of all-purpose flour
  • 3 tbsp of vegetable oil
  • 2 tbsp of red wine vinegar
  • Salt and ground white pepper
  • Water, as needed

For serving

  • ½ ounces of saltine crackers, per serving

For Garnish:

  • ½ tsp of parsley, per serving, chopped

Directions:

Step 1

Place a deep skillet pan on a stove over medium heat, then heat up some oil, and add the potatoes, onions, celery, and carrots. Give them a good toss and saute until translucent, then add the clam juice, and pour enough water to cover all of the vegetables. Bring this to a boil, then reduce it to a simmer, and continue simmering for about 20 minutes or until the vegetables are tender. While waiting for it to cook, place a saucepan or pot on a stove over medium heat, then melt the butter, and add the flour. Whisk them well together until it forms into a roux. Now, slowly add the milk followed by the cream while whisking constantly until incorporated and fully combined.

Once the vegetables are tender, pour the entire content of your pan into the saucepan or soup pot, then stir them together until well combined, and bring to a simmer. Continue letting it simmer for about 10 minutes or until there is no flour taste in your soup. Make sure to not let it boil to avoid burning the soup. Add the clams and vinegar, then stir them together until combined, and reduce the heat to low. Season the soup with salt and pepper according to taste, then serve in a soup bowl together with some crackers, and enjoy!
