My daughter and I absolutely love the Cheesecake Factory’s raspberry cheesecake but we only get to eat there once a year for her birthday. When she was about to graduate from 8th grade, I searched the internet looking for a copy recipe of that cheesecake I would surprise her with on the last day of school. Start by making the crust by mixing together graham cracker crumbles, cinnamon, and melted butter in a small bowl. Make sure to stir thoroughly and avoid having any large clumps before pouring the mix into a springform pan. Once evenly distributed in the pan, cover the rim of the pan in tin foil and store in the freezer until the filling is prepared.
Next, make the filling by putting cream cheese, sugar, sour cream, and vanilla extract into a mixer and mix until smooth. Once you see that all the ingredients are thoroughly mixed, add beaten eggs and mix again. Then pour the batter on top of the crust and place the cake into the oven and cook at 350 degrees for 55 minutes.
While the cake is in the oven, make the icing by mixing only sour cream and sugar. Once the cake is out of the oven all you need to do is spread the icing and refrigerate for at least 4 hours. Enjoy!
