Start by dividing the ground beef into 8 equal balls about 3 ounces each, then place them in the refrigerator.
Get a small mixing bowl, and add the mayonnaise, mustard, grated onion, hot sauce, and Worcestershire sauce. Whisk until well combined, then refrigerate.
Heat a large cast iron griddle or 2 large cast iron pans over high heat. Toast the buns with butter, then place on a plate.
Add the beef balls to the hot cooking surface and place a piece of parchment paper on top to avoid sticking. With a large metal spatula, smash each one to 1/4″ thick patties.
Season each patty with 1 teaspoon of reserved sauce, salt, and pepper. Let them sear for about 2 to 3 minutes or until fat begins to bubble up in the center. Flip them and top 4 of the patties with a slice of American cheese. Sear them for another minute then place a plain patty on top of each cheese patty. Transfer to a plate.
Assemble your burger. Smear the bottom bun with the special sauce, then add lettuce, tomato, double burger, and top bun. Serve and enjoy!
