Prepare the graham cracker crumbs and place them in a bowl. Melt the butter in a pot over medium or medium-low. Keep stirring to keep the milk solids from sticking to the bottom. Once the sizzling starts to slow down, most of the water is gone. Wait until the milk solids turn dark brown, not golden brown. Once dark brown, immediately pour into the graham cracker crumbs. Mix well.
Spray the pie pan with non-stick spray and put parchment on the bottom. Put 2/3 of the crust mixture into the plate. Press into the sides and the bottom. Place in the fridge to chill.
Slice the mango flesh into chunks and place in a bowl. Wear a glove and squish the mangoes to have puree with chunks. If you want some acidity, now is the perfect time to add lime juice.
Pour sweetened condensed milk and cold whipping cream into a bowl. Whip at medium or medium-low speed. Make sure to not overwhip the cream. The cream should hold its shape against gravity.
Remove the crust from the fridge and add a layer of cream about a half inch or three-quarter inch. Next, put a layer of mango and sprinkle some of the crumbs. Repeat the 3 layers. Place in the fridge and freeze for at least 8 hours or overnight.
