If I’m not eating traditional flavored cakes like chocolate and strawberry, you’ll see me feasting with this orange cake recipe from RecipeTin Eats on Youtube. Since I tried this recipe, it quickly became one of my favorites! The nutty flavor and zesty orange flavor; I’ll never get enough of this combination. Watch the video below to learn the full recipe.

Ingredients:

  • 2 medium oranges (fresh whole with rind on)
  • 1 & 1/4 tsp baking powder
  • 6 large eggs, room temp
  • 1 & 1/4 cups white sugar
  • 2 & 3/4 cups almond meal/ground almonds

Directions:

Step 1

Add cold water to a pot, then the oranges, and boil for ten minutes over medium-high heat. Repeat this step 3x. Next, rinse the oranges and let them cool a bit enough for you to hold them. Slice them into 1/4″ slices, then dice. Transfer to a large bowl and let them cool. After this, put them in a food processor. Blitz them on high, scraping the sides in between, until puree consistency.

Step 2

Once you have the right consistency, blitz in the remaining ingredients: eggs, sugar, almond meal, and baking powder. Pour the mixture into a parchment paper-lined cake mold. Bake it in the oven for 60 minutes until the surface becomes golden. After baking, let the cake cool, then decorate it as desired.
