Yellow squash fritters croquettes are the best side dish to make at home. It’s crispy and full of wonderful flavors! Ingredients:

  • 4 large yellow squash
  • 2 green onions (sliced thinly)
  • 2 large eggs
  • 1 cup of self-rising flour
  • 1/4 cup of parmesan cheese
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of cayenne pepper (optional)
  • vegetable oil
  • butter
  • 1 cup of panko breadcrumbs

 

To make self-rising flour, add one and a half teaspoons of baking powder and a quarter teaspoon of salt to the all-purpose flour. Whisk them together.

Instructions:

Step 1:

Shred the squash using a box shredder and remove any excess liquid by squeezing. Place them into a large bowl. Dice the green onions. Once done, add them and the eggs to the shredded squash. Stir all ingredients to combine.

Step 2:

Add the self-rising flour, parmesan, salt, black pepper, garlic powder, cumin, and cayenne into the bowl. Mix all ingredients well.

Step 3:

Put some panko crumbs into a plate. Scoop out the squash batter using a 2-inch ice cream scoop and place it into the crumbs. Coat the top with more and flatten.

Step 4:

Get a large dip skillet and put 2 tablespoons of oil and 1 tablespoon of butter. Put it over medium-high heat. Once sizzling, place squash fritters into the hot oil and cook for 3 minutes until golden brown. Flip them over and cook the other side for another 2-3 minutes.

Step 5:

Once the fritters are golden brown and cooked through, remove them from the pan and place them on a plate with a paper towel to drain excess oil. Serve on a plate. Enjoy!
