Ingredients:

Lime Vinaigrette

  • 2 tbsp Fresh lime juice from about 1 lime
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 tsp Maple syrup or agave
  • ½ tsp Black pepper
  • ½ tsp Cumin powder or cumin seeds
  • ⅓ cup Extra virgin olive oil

Lentil Walnut Taco Meat

  • 2 tbsp Extra virgin olive oil
  • 4 cloves Garlic, minced
  • 1 cup Walnuts, finely chopped
  • 2 cups Cooked black/green lentils or French lentils (don’t use red lentils)
  • 1 (14 ounces) can Tomatoes, diced
  • ½ to 1 Chipotle pepper, minced
  • 2 tsp Chipotle sauce from the can of chipotle peppers
  • 1 tsp Oregano
  • 1 tsp Cumin powder
  • 1 tsp Salt

Corn & Bean Salad

  • 1 can Red kidney beans or black beans, drained and rinsed
  • 2 cups Frozen or fresh corn, thawed or grilled (quick sautéed if fresh)
  • 1 ripe Tomato, diced
  • ¼ cup Red onion, diced (optional)
  • ¼ cup Fresh cilantro, chopped
  • ½ tsp salt or more to taste
  • Juice of 1 lime

Guacamole

  • 2 ripe Avocados, cubed
  • ¼ cup Red onion, diced
  • ½ Jalapeño pepper, minced (seeded or unseeded)
  • ½ cup Cilantro, chopped
  • Juice of 2 limes
  • ½ tsp Sea salt

Taco Bowl (assembly measurements are per serving)

  • 2 cups Romaine lettuce, chopped
  • 2 tbsp Lime vinaigrette
  • ½ cup Cooked brown rice
  • ½ cup Lentil walnut taco meat
  • ½ cup Corn & bean salad
  • ¼ cup Guacamole
  • Handful of tortilla chips
  • Fresh cilantro

Directions:

Lime Vinaigrette. Prepare a small jar with a lid, then put in the mustard, apple cider vinegar, maple syrup, lime juice, cumin, and olive oil, then close the lid and shake until creamy.

Lentil Walnut Taco Meat. Sauté the garlic first, before adding the chopped walnuts, give it a good stir then once fragrant, add black lentil, tomato, pepper, oregano, cumin, and chipotle sauce. Stir it well, add salt and cook for about 10 minutes.

Corn & Bean Salad.  In a large mixing bowl, combine the diced red onion, red bell pepper, tomato, and cilantro. Add in the corn, red beans, lime juice, and salt. Mix them well then let them sit for a while to let all the flavors seep in.

Guacamole. Using a mortar and pestle, mash the scooped avocado flesh, onion, cilantro, jalapeno, juice of 1 lime, and salt until well combined.

Assemble. In a serving bowl, simply pour the lime vinaigrette on top of the chopped romaine lettuce and give a little massage. Add rice, corn and bean salad, lentil taco meat, tortilla chips around the bowl, lastly, put the guacamole in the center and garnish with fresh cilantro. Enjoy.
