Corn & Bean Salad
Taco Bowl (assembly measurements are per serving)
Lime Vinaigrette. Prepare a small jar with a lid, then put in the mustard, apple cider vinegar, maple syrup, lime juice, cumin, and olive oil, then close the lid and shake until creamy.
Lentil Walnut Taco Meat. Sauté the garlic first, before adding the chopped walnuts, give it a good stir then once fragrant, add black lentil, tomato, pepper, oregano, cumin, and chipotle sauce. Stir it well, add salt and cook for about 10 minutes.
Corn & Bean Salad. In a large mixing bowl, combine the diced red onion, red bell pepper, tomato, and cilantro. Add in the corn, red beans, lime juice, and salt. Mix them well then let them sit for a while to let all the flavors seep in.
Guacamole. Using a mortar and pestle, mash the scooped avocado flesh, onion, cilantro, jalapeno, juice of 1 lime, and salt until well combined.
Assemble. In a serving bowl, simply pour the lime vinaigrette on top of the chopped romaine lettuce and give a little massage. Add rice, corn and bean salad, lentil taco meat, tortilla chips around the bowl, lastly, put the guacamole in the center and garnish with fresh cilantro. Enjoy.
