Ingredients:

  • 2lb of sweet potatoes
  • 3/4 cup of brown sugar
  • 1 cup of white sugar
  • 2 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • 1/4 teaspoon of ginger
  • 1/4 teaspoon of salt
  • 2 tablespoons of vanilla extract
  • 1 stick of butter
  • 1 orange (juiced)

Instructions:

Step 1:

Peel and slice the sweet potatoes to the same thickness. Place them in a bowl.

Step 2:

Add 1 stick of butter to a deep pot and let it melt. Add 3/4 cup of brown sugar and mix with the butter. Next, add 2 teaspoons of cinnamon, 1 teaspoon of nutmeg, 1/4 teaspoon of ginger, and 2 tablespoons of vanilla extract. Mix until the butter is completely melted.

Step 3:

Add 1/4 teaspoon salt and 1 cup of white sugar to the pot. Give it a good stir until it becomes thick and smooth.

Step 4:

Squeeze 1 orange and add the juice to the mixture. Give it a good stir until well incorporated.

Step 5:

Add the sliced sweet potatoes to the pot. Mix until everything is coated with the sauce. Let it come to a simmer, then mix it again.

Step 6:

Place the lid on the pot. It’s better to use a lid with a vent, but if you don’t have just slightly tilt it to let the steam come out. Let it steam for about 8 minutes.

Step 7:

Give it a good mix and let it cook for another 10 minutes at super low with the lid. Use a toothpick to check if the sweet potatoes are already cooked. Once done, transfer the sweet potatoes to a baking tray.

Step 8:

Let the sauce cook for another 25 minutes until it’s thick.

Step 9:

Pour the sauce right on top of the sweet potatoes. Serve and enjoy!
