Puff Pastry Éclair Cups
Wrap a puff pastry sheet around an ice cream cup, fold the top close, and place it on a baking tray lined with parchment paper. Brush around the puff pastry with egg wash until all outer parts are covered. Bake at 350°F for 15 minutes. Remove from the tray and pipe with vanilla pudding for filling. Cover the bottom with a cookie, dip, and coat on tempered semi-sweet chocolate, sprinkle with shredded coconut.

Puff Pastry Breakfast Flower Cups
Get a muffin pan and place a thick strip of puff pastry inside in a curved manner, place a round cut puff pastry at the bottom. Combine cream cheese and sun-dried tomato, then mix well. Scoop the mixture and fill each muffin pan with it, layer ham slices in front of the pastry, crack an egg in the middle. Bake at 350°F for 20 minutes.

Notch the sides of a puff pastry sheet about 2 inches diagonally, place the tomato halves on each center, fold the pointed corners inward, letting each point meet at the middle. Place some shredded cheddar cheese and egg yolk at the center, brush egg wash around the puff pastry. Bake at 350°F for 15 minutes.
Lemon Meringue Puff Pastry Boat
In a saucepan, pour the lemon juice, add sugar, eggs, and cornstarch, then whisk until it thickens. Add the butter and continue whisking until well-combined, transfer it onto a piping bag. Take one puff pastry sheet and cut an oval shape at the middle, remove the excess side. Place it onto a baking tray lined with parchment paper then brush with egg wash. Pipe it with the lemon filling, then bake at 350°F for 15 minutes. Pipe meringue on top and torch (optional), garnish with some lemon zest and mint.
