I recently became friends with a Mexican, and she told me about their food. Of course, we all know about their famous beef tacos and tamales. She introduced other dishes that I only heard of and tried for the first time. I was so amazed by the variety of recipes she prepared. It’s definitely a nice experience to be able to learn about others’ cultures through their food. One of my favorites is this Mexican street corn salad. I loved it so much that I looked for recipes online. Gladly, I found this video by CookingCarnival on Youtube. It tastes exactly like the one she made – it’s super easy and quick to make. Elote seasoning is a combination of salt, cheese, chile pepper, chipotle, and cumin.

Melt 1 tablespoon of butter in a pan. Once melted, add 1/2 tablespoon of chopped jalapeno, and 1/2 tablespoon of grated garlic. Saute for a few seconds.
Add 2 cups of fresh corn to the pan and stir. Cook until it gets a little bit caramelized. After that, transfer the corn into a bowl and let it cool.
Add 1/4 cup of mayonnaise, 2 tablespoons of sour cream, 2 tablespoons of cilantro, 1/2 tablespoon of elote seasoning, and 1 1/2 tablespoons of lemon juice to the corn. Mix until well combined.
Garnish the corn salad with grated parmesan on top. Serve with tortilla chips is preferred. Enjoy!
