Ingredients:

  • 2 leftover chicken carcasses
  • 2 large carrots, broken in half (no need to peel)
  • 2 sticks of celery, roughly broken
  • 2 onions, sliced in half (no need to peel)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 chicken stock cubes, crumbled
  • 3 tbsp cornflour mixed with 1/3 cup cold water
  • 1/2 tsp gravy browning (optional)

Directions:

Step 1

Add 2 leftover chicken carcasses in a large pot followed by two carrots that have been broken in half, two chopped in half celery sticks, and two chopped-into-quarters onions. Pour enough water to cover the chicken, then season with 1 tsp of salt, 1/2 tsp pepper, and 3 crumbled chicken stock cubes. Bring to a boil, then turn down the heat and simmer for four to five hours until reduced by half. After simmering, let it cool down for about ten minutes.

Step 2

Place a fine sieve over a mixing jug, then pour the contents of the pan into the sieve, squeezing any juices out with the back of a spoon. After this, pour the stock into a smaller pan, bring it to a boil, then turn it down to a simmer. Now, slowly pour in the cornstarch slurry (3 tbsp cornflour mixed with 1/3 cup cold water) while stirring continually until your desired consistency. If you want it to be a bit darker, stir in a few drops of gravy browning. Turn off the heat and allow to cool, then transfer to an airtight container and place in the refrigerator for up to two days before Christmas.
