Materials:
- hydrated lime
- food-grade buckets
- food-grade screw top lids
- unwashed farm-fresh eggs
- purified or distilled water
Directions:
Step 1
Take note that you’re going to need one ounce of hydrated lime per one quart of water. Now, pour four quarts of water into the bucket (make sure your bucket is super clean) followed by four ounces of hydrated lime. Whisk until well combined.

Now, put your eggs, small side down, into the bucket. Once done, attach the rim and put on the lid tightly. You can add more eggs over the accumulation of however long you want to store them. Keep the bucket in a cool and clean area where it’s undisturbed. After you take off your eggs, rinse them off in clean water. Take this time also to check if the egg will float or not. A good egg will not float on the surface and will just stay submerged in the water.
