In a bowl, add oil, salt, pepper, garlic powder, oregano, and paprika. Mix all the ingredients together. Put the chicken in the bowl and toss until fully coated. Let it marinate for an hour. (optional)
Get a large pan or skillet and place over medium heat. Put the marinated chicken and cook each side for 4-5 minutes or until fully cooked. Once done, remove from heat and set aside to cool.
Add celery, apple, cranberries, green onion, red onion, parsley, almonds, and lettuce into a large bowl.
Slice the chicken into small pieces then add to the salad.
Make the dressing of the salad. In a small bowl, add the mayonnaise, greek yogurt, dijon mustard, lemon juice, salt, and pepper. Mix all ingredients well.
Add the dressing to the salad and mix.
