Ingredients:

  • 4 medium yellow onions
  • 2 tbsp olive oil
  • 1½ tbsp butter
  • 3 tsp sugar, raw or regular
  • 1 tsp salt, or to taste
  • 3 tsp all-purpose flour
  • 3 medium garlic cloves, finely minced
  • ⅓ cup of white wine, you can use dry wine, beef stock, or skip this part
  • 5 cups of Beef stock or beef or chicken broth
  • 3 sprigs of fresh thyme
  • ½ tsp of dried thyme
  • 1 bay leaf
  • ½ tsp pepper, or to taste

Directions:

Step 1

Slice the onions, then transfer them to a bowl, and set aside. Place a Dutch oven on a stove over medium heat, then add the oil and butter, and once the butter has almost melted, add the sliced onions. Toss the onions well and let them cook for about 5 minutes before adding the sugar and salt, then give them a good stir to combine, and cook for about 35 minutes or until caramelized while stirring often. Once caramelized, add the garlic, then lower your heat before adding the flour, and mix them together until well combined. Deglaze the pot by adding the wine, then add the broth, and stir them together to combine.

Step 2

Now, add the pepper, fresh thyme, dried thyme, and bay leaf, then give them a good stir, and bring it to a boil over medium heat. Remove the foam forming at the top, then lower your heat temperature, and let it simmer for 30 minutes stirring every now and then. While waiting for the soup to cook, prepare the bread. Slice the baguette into ¾ inches, then brush each side with olive oil, and then slice each into quarters. Lay them on a baking sheet lined with parchment paper, then put them in the preheated oven at 425°F, and let them bake for about 6 minutes. Once the soup is ready and the bread is done baking, scoop the soup into bowls, then top them with cheese, and broil them on high setting for about 2½ minutes or until nice and bubbly.
