Step 1
Heat a skillet pan on a stove over medium to medium-high heat, then add in your ground beef, and let it cook until it turns brown. Drain off all the excess fat from the pan before adding in the diced onion. Mix them together until well combined, then add in the minced garlic, 1 can of drained corn, 1 can of drained beans, 1 can of roasted green chilis, 1 can diced tomato, and a bit of tomato juice from the can of diced tomato, mix them together until fully incorporated. Season your mixture with cumin, paprika, chili powder, salt, pepper, garlic powder, and onion powder to taste, but you can use any seasoning you like. Stir your beef mixture together, then flatten it out in the pan nice and even, turn off the heat.

Prepare a large mixing bowl, if you have a box of jiffy then add it onto the bowl as it would be much easier. But, if you don’t have a box of jiffy, then you can just combine the cornmeal, salt, flour, baking powder, sugar, oil, egg, cream corn, and milk, mix them together until uniform. Add in some diced jalapeno with no seeds, mild cheddar cheese, and sharp cheddar cheese as well, mix them together until fully combined and smooth. Sprinkle a bit of pepper jack cheese on top of your meat mixture on the skillet, then pour the cornbread mixture on top, spread it out until nice, and even. Bake it in a preheated oven at 400 degrees for about 20 minutes until the cornbread is done.
