Step 1
Place a deep pan on a stove over medium-high heat, then add the sweetened condensed milk and egg yolks, and whisk them together until incorporated. Change the heat setting to low, then add the evaporated or fresh milk and vanilla extract, and continue stirring them together until thickened. Turn off the heat, then add the salted butter, and continue mixing until incorporated before transferring it to a dish. Cover it with a cling wrap and put it inside the refrigerator to cool. In a mixing bowl, beat the heavy cream until thickened, and gradually add the chilled custard mixture beating well in between each addition until incorporated, make sure to always scrape the sides and bottom.

Step 2
In a wide dish, mix together the instant coffee and hot water, then soak the graham crackers, and lay them on a dish until the bottom is covered. Spread some of the cream custard all over the graham crackers evenly, then repeat this layer three times, and put it inside the refrigerator to chill while preparing the ganache. In a pyrex or measuring cup, add the dark chocolate and hot heavy cream, then stir them together until melted, and pour it all over the chilled cake until covered. Sprinkle some chocolate bits all over the top, then serve chilled or immediately, and enjoy!
