Potato or meat patties are a staple in almost every household because they are very simple and easy to prepare and super delicious, too. But, if you prefer a healthier vegetable substitute, then you might just love this recipe by We Cook Vegan on YouTube! It’s so crispy and flavorful and tastes even better when served with a creamy dipping sauce on the side.
Step 1
Put the lentils in a large bowl, then fill it with water enough to cover and completely submerge the lentils, and allow them to soak for about 2 hours. Strain them well with a fine mesh strainer, then transfer them to a food processor or blender, and add in the chopped shallots, minced garlic, grated carrots, and freshly chopped parsley as well.

Step 2
Add the tomato puree, salt, and black pepper as well, then blend them all together until smooth and fully combined. Place a nonstick pan on a stove over medium to medium-high heat, then spread olive oil all over the bottom and sides, and let it heat up. Scoop some of the veggie mixture, then shape it into a patty using your hands, and gently place it in the hot oil.
Step 3
Place more patty in batches to make sure you’re not overcrowding the pan, then fry them until both sides are nice, crispy, and cooked through. Transfer the cooked patties to a tray lined with parchment paper or paper towels to drain off the excess oil, then transfer them to a serving plate or dish, and serve them with your favorite dipping sauce on the side.
