Ingredients for Jam Oatmeal Bars:

  • 1 cup of all-purpose or plain flour
  • 1 cup of old-fashioned rolled oats
  • ½ tsp of sea salt
  • ½ tsp of baking soda
  • ½ cup of butter, melted
  • ⅓ cup of brown sugar
  • 3 tsp of vanilla extract
  • 1 cup of raspberry jam, or any jam you prefer

How to Make Jam Oatmeal Bars:

Step 1

Preheat your oven to 350°F, then line an 8×8-inch baking dish with parchment paper with an overhang on the sides, and set it aside. In a medium-sized bowl, add the flour, rolled oats, salt, and baking soda, then mix them well until combined, and set it aside.

Step 2

In a separate bowl, add the melted butter, vanilla extract, and brown sugar, then mix everything until incorporated, and add in the rolled oats mixture. Mix and fold everything until evenly combined, then pour in 3/4 of the mixture into the prepared pan, and press it down firmly to the bottom.

Step 3

Place it in the preheated oven and let it bake for about 10 minutes, then remove it from the oven, and immediately spread the jam over the top. Crumble the remaining mixture, then sprinkle it over the jam layer, and put it back in the oven to continue cooking.

Step 4

Bake it for an additional 10 minutes or until the topping is cooked through and light golden brown. Remove them from the oven, then let them cool on the counter for about 30 minutes, then let them chill in the fridge for another 30 minutes, and cut them into bars. Serve and enjoy!
