Ingredients for Chocolate Lava Cookies:

Ganache

  • 6-ounce bar of semi-sweet chocolate, finely chopped
  • 2/3 cup of heavy cream

Cookie Dough

  • 1 cup of unsalted butter, softened
  • 1¼ cups of granulated sugar
  • ½ cup of light brown sugar, firmly packed
  • 1 large egg + 1 large egg yolk, at room temperature
  • 1 tsp of vanilla extract
  • 3⅓ cups of cake flour
  • ½ cup of dark cocoa powder
  • 2 tbsp of cornstarch
  • 1 tsp of baking powder
  • ¼ tsp of baking soda
  • ¾ tsp of table salt
  • Powdered sugar, for topping

How to Make Chocolate Lava Cookies:

Step 1

Place a small saucepan on a stove over medium-low heat, then pour in the cream, and heat it until steaming. Turn off the heat, then place the chocolate in a medium-sized heat-proof bowl, and pour in the hot cream. Cover the bowl with foil, then let it sit for about 5 minutes, and whisk the chocolate until smooth and melted.

Step 2

Place the ganache in the refrigerator, then let it chill, and while waiting, prepare the cookie dough. In a large mixing bowl, add the butter and sugar, then beat them until light and fluffy, add the egg, egg yolk, and vanilla extract, and stir them until well combined.

Step 3

In a separate medium-sized mixing bowl, add the cake flour, dark cocoa powder, cornstarch, baking powder, baking soda, and salt, then give them a good whisk until well combined, and gradually add them to the wet ingredients while beating consistently until fully combined.

Step 4

Cover the dough with plastic wrap, then place it in the refrigerator, and let it chill for about 30 minutes. Once the ganache is solid, scoop them into tablespoon-sized portions, then put them on a baking sheet lined with wax paper, and put them in the freezer to harden.

Step 5

Once the cookie dough is almost ready, preheat your oven to 375°F, then line the baking sheets with parchment paper, and set them aside for later. Scoop about ¼ cup of cookie dough, then roll it into a smooth ball and press down the center with your thumb. Place a frozen ganache on the center, then fold the sides, and roll it into a smooth ball again.

Step 6

Do the same for the rest, then place them in the prepared baking sheets, and make sure to space them evenly about 2 inches apart. Place them in the center rack of the oven, then bake them for about 13 minutes, and remove them from the oven. Immediately flatten them gently as shown in the video, then let them cool on the tray, and dust them with powdered sugar. Serve and enjoy!
