Looking for the perfect Valentines Day treat? These deep fried cheesecake stuffed chocolate covered strawberries are the perfect dessert you probably never knew existed. After I made my first batch, I was surprised how easy they were to make and how little effort was required on my part.
Valentines Day is one of my favorite holidays of the year for one reason in particular: all the fun sweets that I can eat. Until recently, my all time favorite Valentines Day treat was easily chocolate covered strawberries. This past weekend, I went over to my friends house for a dinner party where a verity of appetizers and desserts were served. As I made my rounds, surveying the food, a dish full of deep fried cheesecake stuffed chocolate covered strawberries that my friend made caught my eye. She insisted that I try one, claiming that they were better than regular chocolate covered strawberries that she knew I loved. When I popped the first one in my mouth, my expectations were greatly exceeded. The next day I rushed to the store and gathered my ingredients for a batch of my own.
Begin by making the cream cheese filling by mixing the cream cheese, vanilla, and powdered sugar together. Then use a spoon to hollow out the strawberries before filling them with the cream cheese.
Then make the chocolate batter by mixing together the pancake mix, cocoa, salt, milk, sugar and eggs together in a large bowl. After the batter is created, dip and coat the strawberries in the mix.
Deep fry the strawberries in oil for 2-3 minutes. Let cool and coat with powdered sugar.
