Honey Glaze:
Peel the potatoes, then cut them into small medium chunks. Next, salt a big pot of water, add 1/2 tsp of baking soda, then add the potatoes. Let it come to a boil and cook the potatoes for about ten minutes or so until fork tender. In the meantime, make the honey glaze. Combine Dijon mustard and honey to taste in a small bowl and mix together. Set aside.
Once the potatoes are done, drain them well and let them sit for about 30 seconds afterward to release any excess moisture. Then, transfer the potatoes to a large mixing bowl, add 1/2 cup of duck fat, and season with salt and ground black pepper. Toss the potatoes until fully coated with the seasonings. After this, lay the potatoes on a baking sheet, spreading them nicely.
Put them in the oven at 400 degrees F and bake for 20 minutes. After 20 minutes, flip each potato, then place them back in the oven for about 30 to 40 minutes. Once done, transfer the potatoes back to the mixing bowl with some salt, then shake and toss, and drizzle the honey glaze dressing. Transfer the potatoes to a serving plate, and garnish with some parmesan cheese and freshly chopped chives.
