What makes these potatoes amazing is the seasonings. For this recipe, besides the Yukon gold, you will need chicken broth, extra virgin olive oil, lemon juice, dry oregano, garlic powder, onion powder, sea salt, black pepper, mustard, and chicken bouillon. They may contain more ingredients than your usual roasted potatoes, but trust me, the taste is way better. They will level up your simple dish to restaurant quality.
Serve them with grilled fish, salad, steak, chicken, or meatballs.
Wash and peel the potatoes. Cut them in half lengthwise then slice them into wedges.
Place the wedges on a baking sheet, then drizzle the olive oil and lemon juice. Sprinkle the dry oregano, garlic powder, onion powder, sea salt, black pepper, and chicken bouillon. Lastly, add the mustard.
Mix everything until all the potatoes are well seasoned.
Cover with aluminum foil and roast at a 400F preheated oven for 30 minutes.
After 30 minutes, remove the foil and toss the potatoes. Lower the temperature to 375F, and bake for another 30 to 45 minutes uncovered, until cooked through and golden. Make sure to keep an eye on the potatoes.
Once the potatoes are cooked, remove them from the oven and garnish with sliced lemon, fresh oregano, chopped parsley, and flaky sea salt if preferred. Serve and enjoy!
