In just 20 minutes, you can make these cheesy zucchini breakfast muffins by One day One recipe – no need to spend a lot of time in the kitchen to prepare delicious snacks in the morning. They are not only tasty but also healthy! You can make them ahead of time and reheat them whenever you’re hungry. How easy is that? They are the perfect grab-and-go goodies. Cut the top of the zucchini and grate. Squeeze the grated zucchini to remove juice then place on a bowl. Save the juice and add to a salad.
Crack two eggs in a bowl, then beat well using a fork. Pour the beaten egg into the zucchini. Next, add 1/4 cup of milk, 1/2 cup and 2 tablespoons of flour, 2 tablespoons of olive oil, 2 tablespoons of fine wheat semolina, 1 tablespoon of baking powder, 1/4 cup of pecorino or parmesan cheese, and pepper. Mix everything until well combined.
Grease your muffin tin with butter. Scoop two tablespoons of the zucchini mixture into each muffin cup.
Place the muffin pan inside the oven and bake at 356 Fahrenheit for about 15 to 20 minutes until lightly browned on top and edges.
Remove the pan from the oven and let them cool for a while before removing them from the pan. Serve and enjoy these handheld snacks!
