In a big bowl, add 4 eggs, 1 1/3 cups of sugar, 1 cup of vegetable oil, and 1 can of pure pumpkin. Mix them all together using a whisk.
Add 2 cups of flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, 2 teaspoons of brown cinnamon, and 1/2 teaspoon of salt. Mix until well combined.
Grease a 9 x 13 baking pan with cooking spray. Transfer the batter to the pan and spread evenly using a spatula.
Place in the oven at 350 degrees for about 30 minutes.
Take the other end of a wooden spoon or a fork and poke holes in your baked cake. Drizzle the caramel on top and spread it the best you can to fill the holes. Then let your cake cool completely.
In a bowl, combine cool whip, cream cheese, and 2 cups of powdered sugar. Mix until well combined and smooth. Next, put the mixture on top of your cake and spread evenly using your spatula. Once done, sprinkle some crushed pecans on top.
Get a slice of the cake and plate it on a plate then drizzle some caramel on top. Enjoy!
