For the water bath:

In a large bowl, add 1 1/2 cups of lukewarm water and 3 teaspoons of instant yeast. Stir until dissolved.
Add 4 cups of flour, 1 teaspoon of salt, and 1 tablespoon of sugar in the same bowl. Stir to combine everything. Flour your hands and knead the dough until it’s soft. Grease your bowl and place the dough. Cover it with a cloth and let it rest for about 60 to 90 minutes.
Punch the dough and divide it into 8 equal pieces. Form into balls then shape them like doughnuts by pressing your finger in the middle to make a hole.
Prepare the water bath. Add 2 liter of water to a large pot, 1/4 cup of agave or maple syrup, and 1 teaspoon of baking soda. Bring it to a simmer. Once simmering, add the bagels and cook for 1 minute on each side.
Remove with a slotted spoon and place on a baking tray lined with parchment paper. Brush them with vegan cream and sprinkle sesame seeds on top. Bake in the oven at 425F for 20 minutes.
