Preheat your oven to 325 degrees F and line your baking sheet with parchment paper. Next, in a large bowl, 1 cup packed brown sugar, 1/2 cup melted butter, and 1/2 cup white sugar. Whisk well to combine. After this, stir in the egg + one egg yolk, and 1/4 cup rum, then fold in 2 1/4 cups flour and 1/2 tsp baking soda. Continue to mix until everything is just combined.

Next, fold in 2 cups of chocolate chips and eight slices of finely chopped bacon. After this, scoop the mixture onto the prepared baking sheet using a medium cookie scooper. Once done, place the cookies in the preheated 325 degrees F oven and bake them for 10 to 12 minutes or until the edges are lightly browned. Serve and enjoy!
