Ingredients:

• 1 large avocado
• 2 – 3 tbsp fresh lime juice
• 1 crushed garlic clove
• 2 cups cooked chicken breast, shredded
• 1/4 cup radish, diced
• 1/4 cup scallions, thinly sliced
• 2 tbsp diced jalapeno (or bell pepper)
• 2 tbsp chopped cilantro
• salt and ground black pepper, to taste

Directions:

Step 1

Slice the avocado in half lengthwise, remove the seed, then make a checkerboard before scooping out the inside into a large mixing bowl. Next, add 3 tbsp fresh lime juice, one clove of crushed garlic, and a pinch of salt. Mash the avocado using a fork, combining it well with the lime juice, garlic, and salt.

Step 2

Next, add 2 cups of cooked shredded chicken breast, 1/4 cup of diced radish, 1/4 cup of thinly sliced scallions, 2 tbsp diced bell pepper, and 2 tbsp chopped cilantro. Season with a bit of salt and ground black pepper, then toss everything until combined. Serve and enjoy!
