For the marinade:

Wash all of the vegetables. Cut the bell peppers in half and remove the seeds. Then slice the halved bell peppers and zucchini into cubes then put them in a bowl. For the broccoli, blanched them in hot boiling water for a few seconds then rinsed in cold water. Once done, slice them and the medium red onion. Put in the bowl.
Add the seasonings. Put the smoked paprika, garlic granules, herb de Provence, red bell pepper flakes, salt, and pepper into the vegetables. Then pour the vegetable oil and lemon juice. Mix all the ingredients with a wooden spatula. You can leave it to marinate for 15 minutes but this step is optional.
Preheat your air fryer to 400 degrees F for 3 minutes. Then grease the basket using cooking oil. Transfer the marinated veggies into the air fryer basket and spread it out. Cook for 12-15 minutes. Stir the contents of the air fryer basket halfway through for even cooking. Continue to cook until tender and crunchy. Once done, remove from the air fryer and serve on a plate. Enjoy!
