Step 1
Cut the zucchini into thin slices, then place them in a large bowl, and sprinkle some salt. Give them a good toss until well coated, then set them aside, and let them release the excess moisture.
Step 2
In a separate bowl, add the breadcrumbs, basil, oregano, thyme, onion powder, shredded zucchini, and shredded parmesan cheese, then whisk them until combined, add the flour, and keep whisking until uniform.
Step 3
In another bowl, add the eggs, paprika, hot sauce, and some parmesan cheese, then whisk them until combined, and set them aside.
Step 4
Line a baking sheet with a wire rack, then preheat your oil to 350°F, and start working on your zucchini slices. Dip each slice of zucchini in the egg wash, then dredge them with the breading, and place them on the prepared baking sheet.
Step 5
Drop them in the hot oil one at a time, then cook them in batches to not overcrowd the pan, and let them fry until crispy and golden brown. Cook the rest of the zucchini, then serve them with your favorite dipping sauce on the side, and enjoy!
