Ingredients:

  • 2 medium zucchini
  • 1 large egg
  • ½ cup almond flour or panko breadcrumbs
  • ½ cup parmesan cheese 
  • 1 tsp Italian seasoning 
  • ½ tsp garlic powder
  • Pinch of salt and pepper
  • Oil for spraying olives

Directions:

Prepare all the needed ingredients.

Slice off the bottom and top of the zucchini. Then, slice the zucchini in half and into thin sticks like fries for about ½ inch thick and 3-4 inches long.

Transfer the zucchini sticks to a bowl and set them aside.

In a shallow mixing bowl, combine ½ cup of almond flour or panko breadcrumbs, ½ parmesan cheese, 1 tsp Italian seasoning, ½ tsp garlic powder, and a pinch of salt and pepper. Mix until all the dry ingredients are well combined.

Beat 1 large egg and dredge each zucchini stick in it. Then, dredge in the almond flour mixture and place in the air fryer pan. Make sure to leave enough space between each zucchini stick.

Spray a generous amount of cooking spray over the zucchini sticks.

Pre-heat the air fryer to 400F.

Place the pan in the air fryer and let the zucchini fries cook for about 10 minutes at 400F or until crispy.
