Step 1

Put the chicken thighs in a 6-quart crockpot arranging them nicely, then in a medium-sized bowl, add the ground ginger, minced garlic, red pepper flakes, pepper, soy sauce, ketchup, apple cider vinegar, Bourbon, brown sugar, honey, and whisk everything until well combined.

Step 2

Pour the sauce over the chicken, then cover the crockpot with the lid, and allow the chicken to cook on a low setting for about 6 to 7 hours or on a high setting for about 3 to 3½ hours or until the chicken is cooked through and tender. Remove the chicken, then cut it into bite-sized pieces, and set them aside.

Step 3

Dissolve the cornstarch in about 3 tablespoons of water, then pour it into the crockpot, and give it a good whisk. Cover the crockpot, then cook the sauce on a high setting for about 20 minutes until thickened, and then put the chicken back into the crockpot. Give them a good stir, then serve, and enjoy!
