This delicious lemon muffin recipe by Mooshie Cooking on YouTube is high in protein and so healthy that you won’t feel guilty even if you eat a lot of it. This treat also requires no flour and egg which makes it even better, plus, you can have this ready in as fast as 30 minutes!

So the next time you want to bake a delicious treat that’s also healthy, make sure to try these lemon muffins and share them with your family or friends over dessert, snack time, or even breakfast. They also only require at least 5 ingredients, unless you want to level them up by adding any topping that you desire.
Topping
Step 1
In a large mixing bowl, add the oat flour and almond flour, then give them a good stir, add the Greek yogurt, and continue mixing until well combined. Mix in the baking powder, then add the lemon zest and lemon juice and keep mixing until incorporated.
Step 2
Divide the mixture into a muffin pan lined with cupcake liners evenly, then place them in a preheated oven at 180°C or 356°F, and let the muffins bake for about 20 minutes or until a toothpick inserted at the center comes out clean.
Step 3
Once done baking remove the muffins and place them on the counter to cool, then while waiting, prepare the topping. In a separate small bowl, add the Greek yogurt and lemon zest, then mix them well, and spread it over the top of the muffins. Add some lemon curd on top, then garnish with more lemon zest if desired, and serve. Enjoy!
