Sweet & Fluffy Lemon Sugar Cupcake Recipe

Whether you’re more of a cake or a cupcake fan, you’ll surely fall in love with this recipe by Your Food Corner on YouTube! These cupcakes are super soft and fluffy with a tinge of zest flavor, but what makes them so delicious is the sweet crusty top that adds more fun to the texture and taste. This recipe yields 12 muffins but you can double the measurements if you want to make a larger batch because personally, these cupcakes are so tasty that 12 of them aren’t enough for me.
Ingredients:
- 1½ cups of all-purpose flour
- ¾ cup of sugar
- 2 tsp of baking powder
- ½ cup of oil or melted butter
- 2 eggs
- ½ cup of curd
- ½ lemon juice
- 1 tsp of vanilla extract
- Zest of 2 lemons
- 2 tbsp of sugar
Directions:
Step 1
In a large mixing bowl, add the sugar, eggs, and vanilla essence, then whisk them all together until well combined before adding the curd and melted butter and continue to whisk until incorporated. Add the lemon zest and lemon juice, then give them a good whisk to combine, add the all-purpose flour and baking powder, and whisk them well until combined and smooth making sure not to overmix.

Step 2
In a separate bowl, add the lemon zest and sugar, then stir them together until uniform, and set it aside. Line a muffin pan with muffin paper cups, then pour the batter evenly and sprinkle the top with the prepared sugar and lemon zest mixture. Give them a few taps to release the air pockets, then place them inside the preheated oven to bake at 180°C or 356°F for about 20 to 25 minutes. Serve and enjoy!
