Whenever I run out of recipe ideas, I make this salad at home and serve it in a sandwich. It is so good and filling. You can also serve it with some crackers or in lettuce cups.

To make this chicken salad, you only need 8 ingredients – chicken, celery, red onion, baby spinach, mayonnaise, Greek yogurt, salt, and black pepper. This recipe calls for a rotisserie chicken! It makes the preparation easier and faster. If you have any leftovers from dinner, this salad recipe is a great way to use them.
Start by preparing all the ingredients. Once they are chopped and diced, add all the ingredients to your salad bowl, including the seasonings. Mix them all together and your salad is ready.

Note: if you don’t want Greek yogurt, you can definitely do all mayo or vice versa
While the rotisserie chicken is still warm, remove the skin and shred the chicken. Chop the chicken into smaller pieces.
In a large mixing bowl, add the chopped chicken, finely diced celery, finely diced red onion, chopped baby spinach, mayonnaise, Greek yogurt, sea salt, and pepper. Mix everything until well combined. Make a taste test. Adjust seasonings if needed.
You can make it ahead of time and store it in an airtight container. It will last in your fridge for up to 5 days.
