  • 2 lb potatoes (Yukon or red potatoes)
  • 6 slices of bacon, chopped
  • 1 small onion, finely chopped
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 3 tbsp sugar
  • 1 tbsp Dijon mustard
  • salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped (optional)
  • 3 tbsp vegetable oil
  • 2 tbsp all-purpose flour
  • Directions:

Step 1

Salt a large pot of water, add the potatoes, and bring it to a boil. In the meantime, prep and chop the other ingredients. Next, fry the bacon and chop it into smaller pieces. Add the chopped onions in the same pot with the bacon fat and season with some ground black pepper. Cook until translucent, then stir in 2 tbsp all-purpose flour. Next, add 1/4 cup water, 3 tbsp sugar, 1/2 cup apple cider vinegar, and 1 tbsp Dijon mustard. Mix together until combined and creamy.

Step 2

After this, add the cooked bacon. (If it gets too thick, add a splash of water.) Now, dice the cooked potatoes in the size of your choice, then add them to the creamy sauce.
