Zucchini has a mild taste. It can be slightly bitter or sweet. You can either eat this vegetable raw or cooked. One of my favorites is this No-Fry Zucchini Fritters Recipe, but did you know you can also add them to your dessert recipes? Yes, you can. This healthy zucchini brownies recipe by El Mundo Eats is one of the delicious treats that you can make with this vegetable. I know it sounds a little bit weird, but for some reason, it actually works. You won’t even taste the zucchini as it blends perfectly with the brownie.
If you are wondering why it is healthy, it’s because one slice only has 98 calories. Try it at home – I am sure you’ll be surprised how good it tastes.
For the topping:
Make the brownies. Start by chopping the brownies into small pieces and place in a microwave safe bowl. Melt in the microwave or using a double boiler. Once melted, set it aside.
In a mixing bowl, add sugar, applesauce, egg, and vanilla extract. Whisk until just combined.
Sift in the flour, salt, baking soda, and cocoa powder directly to the applesauce mixture. Mix until just combined again. Make sure not to overmix it. Then mix in the grated zucchini.
Next, add the melted chocolate and mix well. Pour the mixture into a buttered 8 x 8 inch pan and spread it evenly.
Place in a 350F preheated oven and bake for 40 minutes or until a toothpick comes out slightly crumbly wet when inserted in the center. Once done, remove from the oven and set aside to cool completely.
Make the topping. Chop the chocolate and place it in a bowl. Heat the cream until it’s about to simmer, then pour into the chocolate. Set it aside untouched for about 3 minutes.
After 3 minutes, gently whisk the chocolate and cream until the mixture comes together, then spread onto the cooled brownies. Refrigerate for 30 minutes or until the chocolate sets. Slice and enjoy!
